Gingerbread Cake with Cream Cheese Frosting Recipe

People having a sweet tooth can literally relate to the fact that one cannot just say No to the desserts, and when they are cakes, there’s no point of saying No. In fact, this is not only true for people having a sweet tooth, but this is applicable for everyone. I remember when I was a kid, every time my mom asked me what she should be cooking for my friend’s parties of get-togethers, I used to say please bake a cake. That was my love for the cakes. And with time I became more and more conscious about cakes and my sweet tooth increased with time. And for this, I started to learn baking from my mother. Because my mom has this ‘super-power’ so that she can bake a lot of yummy and rich cakes with a lot of different flavours, frostings and styles.

Cakes are delicious and pretty looking desserts that can be baked at home with so easy recipes and with common home ingredients like butter, flour, sugar and etc. I love the use of chocolate chips, chocolate vermicelli, dense and dark cocoa powder, Oreos and everything that has chocolate in it. I used to think cakes are all about chocolates but then I came to know about the use of cream cheese in cakes. I was like wow, this should be yummy. I tried my first cream cheese cake a few years back after that this type of cake became my most favourite and I tried few of them with a lot of amendments. In that learning process, I came to know about this gingerbread cheese cake.

Gingerbread is a Christmas flavour, right? What does it mean we cannot have those other than Christmas days? Absolutely No. it can use any other part of the year but I love Christmas season and the seasonal flavours like eggnog, gingerbread, peppermint, orange, pomegranate, and other best food flavours.

In this cake, we are going to use all the yummy spices with the moistest cake, laced with robust flavours. And yes, the cream cheese, how can we forget the creamy, fluffy and cool cream cheese frosting. This is the type of frosting that can make addicted to the cream cheese and this balance out the sweetness in the cake. With this, you can wonder its deliciously good taste.

This is one of the most dreamy and perfect cake of the season. If you are looking for some dessert to make for any get-together or family party or even just for family fun celebration, you can make this cake in no time and get the appreciation award from everyone. This cake is basically a layered cake which can be prepared with so less effort that too required so less time.

If you are into decorating cakes with colourful stuff to make it look even more pretty you can use cranberries, and sprinkles to spread over the cake surface. I’m just using cranberries for the decoration because sprinkles look too fancy.

Ingredients

  • 3/4 cup boiling water
  • 1/2 tsp baking soda
  • 2/3 cup unsulphured molasses
  • 3/4 cup granulated sugar
  • 1 2/3 cup all-purpose flour
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup vegetable oil
  • 2 large eggs

Cream Cheese Frosting

  • 6 oz cream cheese, softened
  • 1/3 cup unsalted butter, softened
  • 1 3/4 cups powdered sugar
  • 1/2 tsp vanilla extract
  • Sparkling cranberries and mint leaves (optional)

Let’s have a look at the complete directions of the cake:

Directions

Take 9-inch spring form pan and line its bottom with parchment paper and grease with non-sticky oil spray or with butter. Make sure you grease the sides as well. It is not necessary to have 9 inch pan, though you can use 10 or 8 inch pan with round or square bottom. It’s all on you just make sure you grease the bottom and sides well. Preheat the oven at 350 degrees while you make the batter.

Boil the water in a pot.

Take a heat proof mixing bowl and whisk baking soda and boiling water together. Stir the powdered sugar and golden syrups together until the sugar is completely dissolved. Set this mixture aside.

Take another large bowl, and add flour, cinnamon, ginger, nutmeg, baking powder, cloves and salt and whisk the dry mixture well.

Add eggs and vegetable oil in golden syrup mixture and mix. Now pour this mixture into the dry ingredients and mix well. Pour the mixture in 3 halves. Not all the mixture together, to avoid clumps. Mix well and pour in already prepared baking pan and place in preheated oven for 30-35 minutes until well cooked. Cool this cake for about 5 minutes at room temperature then place in fridge while you prepare for the frosting. Because if the cake is not properly cool, this can affect the frosting consistency.

Directions for the frosting

Take a mixing bowl and place cream cheese and butter together and beat with electric beater until well combines, softened and creamy. Now add powdered sugar, and vanilla essence and beat well the mixture.

Remove the cake pan from the fridge and pour this cream mixture over the cake and refrigerate again until firm.

Roll some cranberries in powdered sugar and place on the edges and at the center of the cake and refrigerate again. Serve with mint leaves topped for decoration.
